Warm over rice pudding, cold with quark and muesli, or as a sweet side dish for pancakes – this apple compote is prepared in just a few minutes and tastes like pure breakfast bliss.
Ingredients

1 kg apples (e.g., Elstar or Boskop)

150 g sugar (adjust to taste)

2 cl lemon juice

a splash of water (just a little, for cooking)
Instructions

Prepare apples
Peel the apples, remove the core, and cut them into small pieces. -
Into the pot
Place the apple pieces in a pot. Add sugar, lemon juice, and a small splash of water. -
Bring to a boil
Cook over medium heat until the apples soften. It should cook quickly – not too long, so the pieces don’t fall apart. -
Remove from heat
Once the apples are soft, remove the pot from the heat and let the compote cool briefly. -
Let cool & serve
Then let it cool completely before serving – it can also be served warm, of course.
Tips & Variations
If you prefer a rounder flavor, add a pinch of cinnamon or a split vanilla pod to the pot at the beginning; it will be fresher with orange juice instead of water. For more bite, slightly reduce the cooking time; for a creamier compote, mash a few pieces at the end. The apple compote keeps for 2–3 days in the refrigerator and freezes wonderfully – perfect as a stock for spontaneous breakfast moments.
