Hearty Sausage Salad

The perfect way to use leftovers - quickly chopped, super hearty

Leftover sausage? Perfect! This sausage salad turns light cold cuts, ham or roast leftovers into a really hearty snack highlight in minutes – fresh, spicy, crunchy.

Ingredients

  • Sausage leftovers of your choice (light sausage, ham, roast), diced

  • 2–3 pickles, diced

  • 1–2 bell peppers, diced

  • Scallions, in fine rings (optional)

  • A pinch of salt

  • Pepper (to taste)

  • 3 tbsp ketchup

Instructions

  1. Prepare ingredients
    Cut sausage leftovers, pickles, peppers and scallions into small pieces. The more colorful and fresh, the better.

  2. Into the bowl
    Put the sliced sausage, cucumbers, peppers and scallions in a large bowl.

  3. Season & mix
    Season with salt and pepper, add ketchup and mix everything well until the ingredients are evenly coated.

    Let the salad sit in the refrigerator for 15–20 minutes so that the flavors combine.

Tips & Variations

A splash of vinegar (or pickle juice) makes it fresher, a teaspoon of mustard spicier. Chives or parsley on top, optional Gouda or Emmental cubes for more creaminess. If you like it crunchier, add radishes; for a little sweetness, corn or apple cubes are suitable. Serve with fresh bread or rolls – and the quick snack is ready.
